Here's what I do with frozen natto from Japan. Every night, I take a frozen packet of natto out of the freezer and place it on the counter before I go to sleep. In the morning, there's a slight elusive hint of aroma wafting through the kitchen because the natto has defrosted. Then you whip the defrosted natto, causing a gorgeous fragrance. and then you add the flavor packet (i never add the mustard) and you whip it again. You pour the sticky stringy result over white rice, add a raw egg to the mixture, and then gently mix it all together. (If you’re in the US, add a pasteurized raw egg. We have strange egg practices here.) Nothing better!
But now, the New York Natto Co (delivered two hours ago) has introduced me to fresh (not frozen) natto, and i am stunned. I never seen natto so full of sticky strands and smelly flavor! This is so good! So far, my favorite is traditional natto. Black soy bean, organic, and turmeric are so good, but I'm an old man stuck in his ways. I will definitely buy all four for my sister who was born in Japan.
Amazon Shoppers, if you've never had natto you might be surprised. Don't give up. It's one of my two favorite foods (along with soft-boiled eggs). Maybe you should try it in a sushi bar. Ask for natto and tuna in a yoko (small) roll, or a natto hand roll that has perilla (beefsteak plant) leaves in it. The perilla might be stranger than the natto to you.
Update one week later: I love it now! The turmeric is my favorite. I eat it twice a day. In the morning, I eat with oatmeal. In the evening, I eat with rice or whatever meal I’m having. It was great on my burger. I tried everything from vitamins, magnesium, hibiscus tea, etc to naturally lower my blood pressure. The morning after I had my first natto, my blood pressure was normal for the first time in a month after my physical.
