The parotid gland is one of the largest pairs of salivary glands located on each side of the face, below and in front of the ear. The parotid salivary glands secrete saliva to initiate the digestive process. Saliva contains organic substances, including enzymes (amylase and lysozyme), proteins (serum albumin, globulin, and mucin), and small amounts of urea, uric acid, creatine, and amino acids.
The parotid glands also secrete a serous substance that contains ptyalin, an amylase enzyme necessary for carbohydrate digestion. Saliva also helps cleanse the upper digestive tract by providing several materials that support intestinal flora. Contained in saliva are significant amounts of protein antibodies, thiocyanate ions, and several proteolytic enzymes, such as lysozyme, that help maintain healthy intestinal flora.
