Baked Parmesan Zucchini

Ever wondered what to do with the mountains of zucchini your garden produces? Looking for a tasty alternative to cheese-bread as a side to a pasta meal? Well, try this on for size. Baked zucchini with a tasty Parmesan topper. Here it is.

Ingredients:
Fresh Zucchini
Pasture fed butter or ghee
Organic Parmesan ( or any type of cheese, pick your taste!)
Fresh Tomato
Any other ‘pizza’ type ingredients you want to try

Take your zucchinis and slice them lengthwise. Melt the butter or ghee in a skillet and baste zucchini. Apply a nice layer of cheese to the cut side of the zucchini, along with any other toppings that require baking. Preheat oven to 375 degrees for 25-35 minutes. Try and make your zucchini slices 1/2 inch or less to get them slightly crispy. When finished baking, remove your tray and add your fresh ingredients. Tomatoes, onions, and garlic powder all work nicely, try a few different combinations to see what tastes best. Serve with a ranch or tomato dipping sauce. Enjoy!
